What we have learnt from the best chefs

We have been struck by how much freeze dried ingredients made an appearance on Great British Menu recently, not to mention other top chefs.

Heston Blumenthal, the ultimate trend setter, used freeze dried strawberries in the Jubilee picnic in 2012, although there are even reports of him using the ingredient in 2008. He was also filmed visiting a freeze drying factory.
